4 ozangel hair pasta, cooked120 g
16 ozfrozen, mixed vegetables473 mL
14 ozItalian-style tomatoes with juice398 mL
1/4 cupchopped onion50 mL
1/2 tsp minced garlic2.5 mL
1 tspolive oil5 mL
1/2 lbgrilled chicken, cut into bite-sized pieces225 g

Preparation:

   1. In skillet, cook onion and garlic in oil medium heat 2 to 3 minutes or until onion is soft and transparent.
   2. Add tomatoes and frozen vegetables; cover, and cook for 5 to 6 minutes.
   3. Stir in chicken and continue cooking another 2 to 3 minutes or until vegetables are tender.
   4. Place pasta on a large platter; spoon tomato vegetable mixture in center; top with shredded cheese.
   5. Serve immediately.
